Ein internationales Forscherteam entdeckt ein Enzym, das dem edlen Gewürz Farbe und Geschmack verleiht
Auf den Spuren der Safranwürze: Prof. Dr. Peter Beyer vom Institut für Biologie II der Universität Freiburg hat gemeinsam mit Prof. Dr. Giovanni Giuliano des Casaccia Research Centre in Rom/Italien und Forscherinnen und Forschern aus Saudi Arabien und Spanien ein Schlüsselenzym für die Synthese von Crocetin/Crocin, Picrocrocin und Safranal entdeckt. Diese Inhaltstoffe sind für Farbe und Aroma des Safrans verantwortlich. Das Enzym namens „Carotenoid Cleavage Dioxygenase 2” (CCD2) bewirkt die Synthese des Geschmacks des teuersten Gewürzes der Welt anhand der Spaltung eines Vorläufermoleküls. „Das bessere Verständnis der Biosynthese eröffnet uns Wege, die Inhaltsstoffe des Safrans mit biotechnologischen Methoden herzustellen“, erklärt Beyer, Mitglied des Exzellenzcluster BIOSS Centre for Biological Signalling Studies der Universität Freiburg.
